Kara Mancar is a rural greens dish that reflects Karabuk's use of leafy vegetables and grains. Local greens similar to black cabbage are sauteed with onion and enriched with bulgur or rice. It is light, seasonal and can be served alone or beside meat dishes.

Ingredients

  • Mancar veya kara lahana
  • Soğan
  • Bulgur veya pirinç
  • Tereyağı
  • Tuz
  • Pul biber

Recipe

    Clean and roughly chop the greens.

    Saute onion in butter or oil.

  3. 3

    Add the greens and cook until wilted.

    Add bulgur or rice, salt and a little water.

    Simmer until the grain softens.
